Hit 1,000 covers in a single lunch shift and almost walked out
Last Saturday we were down a line cook and I was running the sauté station by myself. Somewhere between the 30th order of salmon and the 50th burger I glanced at the ticket machine and it read 1,004 covers for the noon to 3pm window. Never come close to that number before in our little 80-seat spot in Austin. Anyone else ever have a shift where the volume just totally blindsided you?

I had a similar thing happen at my old spot in Houston and I honestly thought the ticket machine was BROKEN. I counted 47 wells of sautéed spinach in my head and just started laughing to myself. By the time I got to ticket 300 I was pretty sure I forgot how to make hollandaise. At one point I dropped a whole pan of mushrooms and just stared at them on the floor for a solid ten seconds before anyone noticed.

Did you time the floor stare like @ericb66 did, because I once dropped a full sheet pan of bacon and just walked away for five minutes.
