Had a grease fire at the diner on Route 9 last Tuesday, changed my hood cleaning schedule
We were slammed during the lunch rush and a flare-up from the grill caught the buildup in the exhaust hood. Took us 45 minutes to shut everything down and clean it out. How often do you guys get your hoods professionally scrubbed?

Read a report from some fire safety group that said like 40% of restaurant fires start in the hood system. Scared me straight honestly. We had a small flare up last spring and the hood filters were caked. Now I do a deep clean every 3 months without fail. That 45 minute shutdown sounds brutal. Better than a full fire department visit though.

Man that report would scare me too, 40% is no joke. Same thing happened at my old place, we had a grease fire catch in the ductwork during a Friday rush. Took us two hours to get everything back online and the health inspector gave us a warning about the hood cleanliness. Now I'm the same way, every quarter like clockwork I pull the filters and scrub them with degreaser, and I even hired a professional to do the ducts once a year. Totally agree, a little cleanup downtime beats having the whole kitchen wrecked any day.
