Had a chat with a new hire that made me rethink my whole prep station setup

I was showing a kid, fresh out of culinary school, how we do the cold station at my place. He just quietly asked, 'Why do you keep the spoons on the left if you're right-handed?' I've had that same setup for eight years, since I opened. I tried it his way for a shift, and I swear I was faster by the end of the night. It's a tiny change, but it made me wonder what other dumb habits I've just stuck with. Anyone else have a small tweak from a new person that actually worked?

Reminds me of the time a busboy asked why I always opened the walk-in with my left hand. Took me a week to realize my right hand was free to grab something on the way in.
