Had a chat with a dishwasher that changed how I set up my prep station
Last Tuesday at the diner I freelance for, the new dishwasher Miguel pointed out I was walking an extra 15 steps every time I needed to grab a clean pan. He said he noticed because he watches where people move when he's scrubbing plates. So I rearranged my cutting board and sauce containers closer to the stove, and now I'm finishing prep like 20 minutes faster. Has anyone else gotten kitchen tips from someone you wouldn't expect?

Bet the dishwashers see everything since they're always watching from the sidelines lol

Keep your ears open and your mouth shut, that's the rule. Learn which waitstaff are the ones who actually help with cleanup and which ones just toss dirty plates at you and disappear. If a server slips you a free drink after a rough Saturday night rush, you know you've got a good one. Worst thing you can do is get caught up in the gossip, because it always gets back to management. Just nod, wash the dishes, and clock out.
