Flat top scraper vs. grill brick, my arms voted and it wasn't close
Back when I ran the breakfast shift at a diner off Route 1 near New Brunswick, I scraped the flat top with a grill brick every single night and figured that was just how it went. Now we use a scraper and a splash of hot water, and the whole thing takes 10 minutes instead of 40. The brick guys say you get a smoother surface and the water guys say you're just burning time. Which camp are you in, and has anyone actually measured the difference on a 3 foot griddle?
Nobody ever talks about the brick grit ending up in the food if you don't wipe it down good. Scraper and water can't leave grit behind, and that's worth more than a "smoother" surface.
