TIL I was brewing my coffee way too hot for 10 years

Was at a shop in Portland last week and the barista asked what temp I brew at. I said I just boil water and pour it over grounds. She looked at me funny and said that's probably why my coffee always tasted bitter. She showed me their kettle set to 205. Tried it at home the next morning with the same beans I had been using and it was night and day. Has anyone else had that moment where you find out you've been doing something basic wrong for years?

Oh man I had a friend who did this exact thing for like 8 years. She would boil her water, let it sit maybe 30 seconds, then pour it over her grounds. Every morning she'd complain about how bitter her coffee was but just thought that's how coffee tasted. Then she got a new kettle from her sister for Christmas with the temperature setting and started brewing at 205. First cup she called me all excited saying she finally understood why people like coffee. She said it was like drinking a completely different drink, smooth and almost sweet instead of burnt tasting.

Isn't it funny how we just accept things are bad until someone shows us better?
