Pro tip: I was washing my beans wrong for 3 years
Stopped by a local roaster in Portland last weekend and the barista told me to rinse my beans with cold water instead of hot before grinding. I tried it on a bag of Ethiopian Yirgacheffe I had halfway through and the difference in clarity was night and day. Anyone else been using the wrong water temp this whole time?

and here I was thinking I was a coffee genius because I remembered to take the beans OUT of the freezer. I've been using HOT tap water like a complete goblin for YEARS, basically making bean soup before I even got to grinding. Tried the cold water rinse this morning on some Costa Rican I had and yeah, the difference is MASSIVE. I thought my pour overs were getting "muddy" because of my grinder but it was just me being a dumbs with water temp.

Oh man, @benk26 you are speaking my language. The hot tap water thing is such a trap because it seems harmless but it really does wreck everything. I found out the hard way when I switched to bottled spring water and suddenly my morning cup wasn't tasting like a burnt ashtray anymore. There's something about letting the grounds bloom with the right temp that just opens up all the little flavors you never knew were there. Glad you got that Costa Rican dialed in, that's one of my favorite regions for a reason.
