Just realized my pour over was weak because I was grinding too coarse
A barista in Portland told me my grind looked like sea salt and should be more like fine sand. I switched to a finer setting on my Baratza Encore and got way more flavor. What's your go-to grind size for a V60?

Honestly, that sea salt tip is spot on for a starting point. I usually go a bit finer than table salt myself, but it really depends on your specific beans and recipe. Just keep adjusting a little until the flavor pops without getting bitter.

That whole sea salt vs fine sand thing reminds me of my buddy Tim who tried to dial in his V60 for like three weeks straight. He kept chasing that perfect cup and finally messaged me one night saying he ground his batch so fine it turned into mud and clogged his filter. I had to laugh because @shane_wilson is right about the bitterness too, Tim's coffee went from watery to bitter real quick once he went too fine. He ended up settling somewhere right in the middle, like a little coarser than table salt but finer than sea salt, and that's where the flavor finally popped for him.
It really is just a balancing act where you have to trust your taste buds more than any rule of thumb.
