Hot take: Don't store your beans in the freezer like I did

I put my fresh Ethiopian beans in the freezer last month thinking it'd keep them fresh, and they came out tasting like old cardboard - all the oils got messed up. I found out from a roaster in Portland that moisture in the bag is the real killer. Has anyone else ruined a batch this way and found a fix?

Yeah once those oils go funky it's pretty much game over, freezing just messes with the whole chemical balance. Best fix is to just buy smaller batches more often and keep them in a dark cabinet instead.

My friend tried freezing her fancy olive oil once. She pulled it out three weeks later and it looked like someone mixed honey into it. The texture was all weird and it tasted flat, like old nuts. She ended up tossing the whole thing and just buying that little 8oz bottle from the farmers market every two weeks instead.
