I used to make coffee with boiling water and wonder why it tasted harsh. After reading up and trying cooler water, my daily brew is actually enjoyable. What brewing detail took you the longest to get right?

That water temp thing is so real. Took me forever to realize I was over-extracting everything with water that was way too hot. Now I use a thermometer and it's a total game changer.

Yeah, waste of money. Just boil it and wait a minute. The whole thermometer thing is overkill for most people. You get a feel for it pretty fast, and your kettle probably cools at a predictable rate. All these extra tools just complicate a simple process.

My first year with a French press... I was using boiling water straight from the stove. Everything tasted burnt and I couldn't pin down why. A cheap thermometer fixed that... feels like learning to brew all over again.
