Am I the only one who realized they were storing beans wrong after 3 years?

I kept my coffee beans in the freezer because I thought that kept them fresh. Read somewhere that it actually ruins the oils and flavor. Now I keep them in a dark cabinet in an airtight jar. Is it actually that big of a deal or are people being dramatic about this?

So you're saying you tasted a difference after switching...?

Used to roll my eyes at people claiming they could tell the difference, thought it was all in their heads. Then my cousin brought over some of that single origin stuff from a local roaster, and I had to eat my words. It was like comparing a fresh tomato from a garden to the pale ones at the grocery store, that's the only way I can describe it. The flavor was just brighter and cleaner, no weird bitterness at the end. Made me realize I was just used to the burnt, flat taste of the mass produced stuff.
