Am I the only one who thinks skipping beef one day a week is a cop-out?
I read a stat from a food group in Oakland that said cutting meat one day saves about 300 lbs of CO2 a year, and I just rolled my eyes. That is nothing next to the flight I took to Denver last month, so why does everyone act like Meatless Monday is the big fix? What is a change you made that actually moved the needle for you?
