The old West Side Market butcher counter that just vanished overnight
I walked into West Side Market last Saturday and realized the butcher stall that had been there since my grandma was a kid is just gone. Replaced by a kombucha stand. Over what, 3 years? I swear the whole place feels different now, more for tourists than people who actually cook. Anyone else miss when you could get your meat cut right in front of you without a credit card minimum?

Did the kombucha stand at least leave the old meat hooks up for decoration? I walked past there last month and felt like I was looking at a ghost kitchen or something. My dad used to take me there on Saturdays and we'd get a whole beef tongue for like eight bucks, now you're lucky to find a decent chuck roast without some Instagram influencer taking photos of their acai bowl. The vibe shift is real when you can't even get a proper cut of brisket because the new vendors are all about prepackaged stuff and QR codes.

Wait, @keithharris, I used to actually defend the new setup there, but you got me thinking. I always figured change was inevitable and the kombucha crowd was just part of the cycle, but seeing you mention the meat hooks and the old brisket spots really hit different. Now I totally get why it feels like a ghost kitchen, the place lost all its character and soul just for some QR codes and fancy bowls.
