My buddy went to a place like that in Vermont and got totally obsessed. He came home and spent six months trying to build a "historically accurate" cooking hearth in his backyard. It mostly just smoked out his neighbors and he gave up when he realized you need a whole different kind of chimney.

Six months on a backyard hearth is wild. That's a serious amount of time to spend on smoke. Guess history doesn't always translate to the suburbs.

Wasn't there a whole thing about how those old hearths need way taller chimneys to work right? @jade738's story about the backyard project kinda proves it.
