Walk-in cooler quit at 11pm on a Friday with 14 covers still on the books
Compressor on our old True unit died mid-service and I moved everything into the reach-ins and dry storage in about 20 minutes flat. Anyone else keep a backup plan for when the cooler goes down, or do you just roll the dice and hope the repair guy picks up?
Moving everything to reach-ins works for a few hours but that's about it. Those units are built to hold temp with the door shut, not to cool down a pile of warm product, so you're really just buying time before stuff hits the danger zone. Dry storage isn't cold at all, so anything you put there needs to get eaten or tossed fast, not saved for tomorrow. The real backup plan is a chest freezer or two and a thermometer you actually check, not just crossing your fingers on the repair guy.
