finally nailed that pasta dough" - man, I feel that pain. Took me like 6 tries before I got mine right. What finally clicked was resting the dough longer. Like 45 minutes minimum, wrapped tight in plastic wrap. Made it way easier to roll out without tearing. Also switched to semolina flour for the dusting, not all-purpose. That gave it the right bite.

Resting dough 45 minutes seems like a lot of extra effort for pasta that'll be gone in 5 minutes.
