Finally got the sourdough starter I've been nursing for 8 weeks to pass the float test.

It took a full month of daily feeds in my apartment's too-warm kitchen before the bubbles looked right. Anyone else have a starter that was stubborn for that long?

Wait, eight whole weeks? That’s a crazy long time to wait for a float test. Mine took maybe two weeks tops. Did you ever get a whiff of acetone or anything weird during all those daily feeds? I’m shocked it didn’t just give up in that heat.

Hold up, rye flour is the secret weapon everyone ignores. It kicks off fermentation way faster than regular wheat, so that long wait time makes zero sense. You would have seen way more activity, maybe even too much for that heat. Honestly, skipping rye might be why it took eight weeks to finally float.
