My aunt swore a $3 bag of chicken thighs would feed me for a week and I owe her an apology
I kinda rolled my eyes when my aunt Kim in Modesto handed me a bag of chicken thighs and said each one could stretch into a whole dinner if I stopped treating meat like the main event. Last month I was blowing about $45 a week on groceries and still eating cereal at 9pm, so I finally tried it her way. I baked all 8 thighs on a Sunday, pulled the meat off, and built four dinners off that one tray plus a $2 bag of rice and some frozen veg. Threw the bones and skin in a pot with onion tops and got a stock that turned into a soup on day five, which honestly tasted better than the thighs did. My grocery bill last week came to $19 and I ate something hot every single evening. Now I'm wondering what else I've been overpaying for out of pure habit, so what's the one cheap swap that actually worked for you?
