Just realized my aunt was right about adding a potato to soup, and I owe her $40
About 5 months ago my aunt Marie came over for dinner at my place in Toledo and watched me dump a whole bag of dried beans into a pot without soaking them first. She told me flat out that I was wasting money on canned beans and that a single potato dropped in the pot would thicken everything up so I would not need to buy cream or cornstarch. I kind of brushed her off at the time but I was spending around $12 a week on canned beans and cream-based soups, which adds up fast when you are on a tight budget. So last month I gave it a shot, soaked a pound of dried pinto beans overnight that cost me $1.29, and threw one peeled russet potato in with them while they simmered. The potato broke down on its own after about 40 minutes and the soup came out thick and creamy without a single can or box of broth. I have made it 4 times now and each batch feeds me lunch for 5 days, which comes out to about 55 cents a bowl if I do the math. My aunt keeps asking when I am going to admit she was right and honestly I am ready to. Does anyone else use potatoes to thicken things up, or do you have another cheap trick like that?
