That time I swore off frozen veggies and then proved myself wrong

For years I thought frozen broccoli was just sad wet mush, you know? Like why bother when the fresh stuff is right there and only like a dollar more. But last winter I was broke after Christmas and the fresh produce at my local Walmart was looking rough, so I grabbed a bag of frozen mixed veggies for $1.50. I roasted them in the oven with some oil and garlic powder at 400 degrees and honestly they came out crispy and perfect, no joke. Then I tried the frozen spinach in my pasta sauce and it thawed right down and I couldn't tell the difference. Now I keep a couple bags in the freezer all the time for lazy weeknight dinners. Has anyone else had a random food they hated become a staple?

they come out crispy" - real talk, you might want to check your oven temps cause frozen broccoli usually steams more than crisps unless you dry it out first. I learned that the hard way after telling everyone my secret to crunchy frozen veg and it was really just my oven running hot lol.

I started buying frozen bell peppers and onions after I ruined three fresh ones in a row by forgetting them in the back of the fridge. They get slimy so fast, it drove me crazy. Now I just toss a handful straight from the bag into my skillet with some ground beef and taco seasoning and it's done in ten minutes. The texture is fine once they cook down, honestly. I still grab fresh broccoli when I want to eat it raw with dip, but for anything hot I'm all frozen now. Saves me money and way less food waste.
