Pro tip: I was boiling my dried beans for 2 hours when all they needed was a 12 hour soak

Realized this after a coworker in Austin told me I was basically making bean soup instead of using them for tacos, what cheap trick did you finally catch onto way too late?

Oh man, I gotta disagree a little... soaking them that long can sometimes make them mushy if you're not careful. I usually just do a quick soak method and it works fine for me.

Quick soak is all I need, never had a mushy bean problem either.

Haven't you heard that soaking can actually change the texture depending on the bean type? @seanjohnson, I read somewhere that older beans need a longer soak to get tender, not quick. Quick soak works fine for me too, but sometimes I wonder if the mush factor comes from cooking them too fast after.
