My mom's old comment about beans finally clicked last week

I was talking to my neighbor Mrs. Chen about her garden and she said 'people forget a bag of dry beans costs like 2 bucks and feeds you for a week.' Made me think about how my mom used to stretch ground beef with lentils back in the 90s. Anyone else grew up on meals like that and only now realize how smart it was?

Three pounds of dried pinto beans cost me 4.50 last week at the grocery store. I cooked them up with some onion and a ham hock and I swear we ate off that pot for like five days straight. My wife looked at me like I was crazy when I said dinner was beans and cornbread for the third night in a row. But honestly those meals hold up better than half the takeout we order. I used to complain about bean night as a kid and now I'm planning my grocery list around them like a dork.

Man I felt that bean night comment deep in my soul. My dad used to make a big pot of great northerns with bacon ends and my brother and I would groan but now I literally crave that exact meal. That pot of beans on day three when the flavors have all melded together and the cornbread gets all crumbly in the broth is genuinely better than most restaurant food. I started freezing half the batch in quart bags after the second day so my wife doesn't stage an intervention but also so we have emergency dinners ready to go. The best part is you can dress them up different each time like one night with hot sauce and pickled onions then next day with shredded cheese and sour cream. I'm at the point where I actually get excited when I see ham hocks on sale because I know bean season is coming.
