Have you tried just using a small handful of the tops, @faithgonzalez? I find using too many does make things bitter, but a few stems add a nice herby note to stock. It's a simple trick that really cuts down on waste.

No way. Carrot tops are a total game changer. @faithgonzalez, I started tossing a small bunch into my chicken stock and it adds this fresh, almost parsley-like flavor. I tried it with a simple veggie broth too, just onions, celery, and the tops. It doesn't taste like carrots, just a nice green herby lift. You have to treat them like any strong herb, though. Too many and yeah, it gets weird and bitter. But a few? Free flavor.
