I'm baffled by how to cook dried chickpeas without them being gritty

I soaked them overnight and boiled for hours, but they're still hard in the middle. Is there a trick I don't know about?

Actually, that gritty texture can be a plus for certain recipes like chana masala. It means they won't fall apart during a long simmer. Some cooks even skip soaking to keep that firm bite. What are you using them for?

Oh man, I've been there. Try adding a pinch of baking soda to the water when you boil them, it helps break them down.
