Hot take: cheap chicken thighs beat chicken breast for meal prep, and it saves me $22 a week
Everyone keeps pushing chicken breast as the go to for cheap meal prep, but I think that is backwards. Breast runs about $4.99 a pound at my store here in Akron, while thighs with the bone in are $1.79, so for a week of lunches I put out around $9 instead of $31. Pulling the bones out takes maybe 15 minutes with a sharp knife but the meat stays juicy even after 3 days in the fridge, which breast never does for me. The bones and skin get tossed in a pot with an onion and carrot ends for stock, so nothing gets thrown away. My buddy who meal preps on Sundays said thighs were "too greasy" until he tried mine, and now he's swapped over too. The only real catch is you can't just bake them plain, they need salt and some smoke or they taste flat. What cuts are you all leaning on for cheap protein?
