Had a total disaster week with my meal prep Sunday and it actually saved me money
So I usually do the whole Sunday meal prep thing like clockwork. Rice, beans, roasted veggies, some kind of chicken situation. But last Monday I walked into my kitchen and realized I forgot to plug in the slow cooker. The whole batch of black beans was just sitting there room temp all night. Threw it out. That was $4 down the drain. Then Tuesday my stupid fridge started acting up and I had to toss my prepped lunches for Wednesday and Thursday. By Friday I was pretty frustrated and just grabbed whatever was around. Ended up making this random soup from half an onion, a can of crushed tomatoes, some stale bread, and a bag of frozen spinach that was about to get freezer burn. It was actually really good. Way better than my usual prep stuff. Made me wonder if I overthink these cheap meals too much. Has anyone else had a week where your plans fell apart and you ended up eating better?

That reminds me of the time I tried to be fancy and make my own granola bars. Everything went wrong, they turned into crumbly mess, but the crumbs were amazing on yogurt. Sometimes the happy accidents taste better than the planned stuff.
