Can we talk about how long it takes to get dried beans soft without a pressure cooker
I tried making a big pot of pinto beans last Saturday to save money and it turned into a 5 hour mess. I soaked them overnight like everyone says, then boiled them for 2 hours and they were still hard in the middle. I added baking soda like some site told me, cooked them another 90 minutes, and they finally got soft but the skins were falling apart. My roommate said his grandma just uses a slow cooker overnight and never has this problem. What am I doing wrong here, do I really need to buy a pressure cooker to make cheap beans work?
Salt is actually the thing most people miss. A tablespoon or two in the soak water helps way more than baking soda, and it won't tear up the skins like that stuff does. Old beans are the other culprit, if they sat on the shelf for a year or two they'll never get soft no matter how long you cook them.
