A client in Austin told me my miter joints were 'visibly open' and it made me switch to a shooting board.

I used to trust my miter saw's fence alone, but after his comment I built a simple jig and now hand-plane every joint. Anyone have a better method for perfect 45s on long crown?

Honestly, that "visually open" comment would make me switch too. I had the same problem with my miter saw. Tbh I use a digital angle finder on the saw first, then I sneak up on the cut with a hand plane on a shooting board just like you. For long crown, I'll sometimes clamp a backer board to help with tear out. It's slow but it works.

Ever get the feeling your tools are just politely lying to you? My miter saw has the same problem my ex-wife did, says it's fine when it's clearly not.

@betty_white39 that "visually open" thing reminds me of something I read the other day about how tools with digital readouts sometimes give false confidence. Like the angle finder says 45 degrees but the blade is actually a half degree off because the base wasn't flush with the material. I started double checking my miters with a simple speed square before I commit to the cut now. Way less cussing involved.
