Warning: that $40 boning knife from the swap meet was trash

Picked it up last month at the Stockton flea market, looked solid but dulled after two sides of pork. I went back to my old Victorinox and guess what, the cheap blade chipped on the third use. Anyone else burned by a bargain blade that couldn't hold an edge for a full shift?

Did you really expect a 40 dollar swap meet knife to hold up like a Victorinox? That's like buying a 2 dollar wrench and getting mad it strips bolts, you get what you pay for. I'd say you got exactly your money's worth, and honestly that's a pretty cheap lesson compared to most tool failures.
