Just broke down a whole hog in under 45 minutes for the first time

I've been working at Miller's Meats for about 8 months now, and my usual time was always around an hour. I finally got the flow right with my Victorinox boning knife and a fresh steel, and the clock stopped at 44 minutes. It felt like everything just clicked, from the shoulder separation to the ham removal. Has anyone else hit a personal speed record that surprised them?

Nah I actually think 44 minutes is a pretty big deal, feels like everything finally clicked into place.

My buddy at the smokehouse did something similar with a brisket trim last month, he said it was like his hands just knew what to do all of a sudden. That muscle memory finally kicking in is a wild feeling, lol. Congrats on the new record.
