Finally got the hang of that tricky lamb shoulder seam after watching a guy in Melbourne do it on his phone.

I was struggling to separate the shoulder from the neck cleanly for months, but after seeing a video of a butcher in Victoria use the tip of his boning knife to find the seam first, I tried it on three lambs yesterday and saved at least 15 minutes on each one, so has anyone else found a specific video or demo that finally clicked for a cut you'd been butchering the hard way?

Yeah that whole blade thing was me too. I got so mad at myself when I saw how easy it was with the tip first. @the_pat knows what I'm talking about, right? After that video I was like why did I waste all that time.

That trick with the boning knife tip is a total game changer. I had the same lightbulb moment watching a guy break down a pork shoulder on a tiny screen.
