Appreciation post: the meat science class at Iowa State that changed how I handle primal breakdowns
Spent a Saturday at their meat lab last spring watching them break down a whole steer with ultrasound data on marbling, and now I actually trim and portion based on where the fat's distributed instead of just guessing by eye, has anyone else gone through one of those university extension programs?

@the_karen I used to think the same, but that class completely changed how I break down primals.

Oh c'mon. I've been doing this long enough that a chart and a fancy ultrasound aren't going to tell me more than my hands and eyes already do. A full day watching a lab coat point out fat streaks sounds like a cure for insomnia.
