Pro tip: stop throwing away your vegetable scraps for stock

I kept seeing friends toss carrot peels and onion ends in the trash like it was nothing... so I started saving mine in a freezer bag. After 3 months I had enough for a big pot of stock that would've cost me $8 at the store. Anyone else do this or am I just being cheap?

How much freezer space you got? I tried this once and ended up with a bag of slimy scraps taking up a quarter of my freezer for three months just to save like two bucks.

@kelly.daniel brings up a good point about space. Three months for a bag of scraps to make stock is a long time to commit. I just toss peels and ends because the store sells stock for almost nothing when it's on sale. Plus a lot of those veggie scraps are dirty or have bad spots. You really want to scrub a carrot peel and trim off the ugly bits just to freeze it for later? Not worth the effort in my opinion. It's nice in theory but the math never adds up when you factor in the time and freezer space.
