My $280 meal plan lasted 2 weeks, not 4. Here is what I changed
I bought a bulk ingredient meal plan from a local co-op in Portland thinking it would cover the whole month and save us money, but we blew through it in 14 days because I ignored portion sizes. After recalculating, I swapped the fancy quinoa bowls for a basic rice and bean rotation and stretched the same budget to 25 days. Has anyone else found that meal prep math works way better when you write out every single serving ahead of time?

My co-op out in Eugene had the exact same deal, I spent $240 and thought I was set for a month, but my partner and I killed it in like 12 days because I was just eyeballing portions. Once I actually measured out a cup of rice per person and froze single servings of beans, it got way less scary. Writing the whole week ahead on a sticky note changed everything for me, I mean I still mess up sometimes but now it's more like 20 days instead of 12. The quinoa thing is real too, I swapped it for barley and honestly nobody in my house even noticed the difference.
