Rant: My $7 bag of frozen veggies stretched into five meals this week

I grabbed a big bag of mixed frozen vegetables on sale for $7 last Sunday and somehow turned it into stir fries, soups, and even a weird frittata thing that actually worked, but now I'm wondering if anyone else has a go-to cheap staple they accidentally lean on way too hard.

Did you freeze any of it or just eat it all week?

Freezing stew just kills the texture of the veggies honestly. Better to just power through it for a few days and enjoy it fresh.
