My grocery bill in Atlanta dropped by $30 last month when I started making my own veggie broth.
I was throwing out onion skins and carrot ends for years, but now I keep a bag in the freezer and simmer them with water for an hour. What other kitchen scraps do you guys save to avoid waste?

Save herb stems, especially rosemary.

I tried rosemary stems in my stock pot and they gave it a weird bitter taste. I stick with just the leaves now and save the stems for the grill instead.

My freezer bag is full of celery leaves and the white parts of leeks. I toss in mushroom stems too, they add a deep flavor you don't get from just the caps. Even potato peels go in, but only if they're clean. The broth comes out darker and richer, perfect for gravy or stew.
