Had a chat with a lady at the food pantry in Akron who showed me how to stretch 5 pounds of potatoes into 8 different meals

She said she cooks them all at once on Sunday then mixes them with different cheap pantry staples like canned tomatoes or leftover rice for variety, and honestly I never thought of batch-cooking just the potatoes before, how do you guys stretch one big ingredient across the week without getting bored?

Big pot of beans is my go-to. Cook up a whole bag of dried pintos or black beans on Sunday, then throw them into tacos, quesadillas, salads, or just eat them with rice and hot sauce for a few days. Never gets old if you switch up the seasoning each time.

idk @the_finley, I mean I respect the bean prep but "never gets old" is doing a lot of heavy lifting there. I've done the big pot thing and by day three I'm staring at the fridge like there's nothing to eat because I'm so bored with beans. Maybe it's just me but switching up seasoning only does so much when the texture is basically the same every time. I'd rather do a couple different protein sources through the week so each meal feels fresh instead of just one big batch of anything.
