Forgot a pot of rice on the stove... now I swear by stale grains

I left rice cooking too long and it got hard, but it was perfect for frying up the next day. I think using day-old rice saves cash and gives fried rice a nice texture. Do you ever let food sit on purpose for your meals?

Wait... you forgot it on the stove on purpose? I always thought that was an accident people just dealt with. My rice never dries out right when I try to plan it. I end up with a weird wet clump that fries into mush. Maybe I need to actually forget about it like you did.

Feel your pain on the weird wet clump, @torres.kelly. It happens to me all the time when I try to make fried rice on purpose. The secret is leaving the cooked rice sitting out way longer than feels right, like a full hour. You have to let all that steam out so the grains get dry and separate. I swear, the best fried rice comes from that leftover container from last night. Maybe the trick is just pretending you forgot it?

Ever accidentally leave rice out overnight? My buddy did that once and made the crispiest fried rice of his life.
