Finally managed to turn 5 pounds of chicken thighs into 8 separate meals last week

I always felt like I was wasting money buying in bulk, but last week I grabbed a big pack of chicken thighs on sale for $2.19 a pound. I roasted half for dinners, shredded the rest for tacos and soup, and even froze some for quick lunches. It came out to like $1.30 per meal compared to the $4 I normally spend on frozen stuff. Anybody else have a go-to trick for stretching a cheap cut of meat across the week?

Ever notice how the rich get richer by buying bulk and the rest of us pay more for less?

Gotta push back on that a little, man. In my experience buying in bulk has saved me more than it's cost me, even on a tight budget. It's more about having the space and time to prep than anything else.
