Was mixing mortar wrong for 8 years until a foreman stopped me last Tuesday

I always added all the water first then dumped the mix on top, thought that was standard. Foreman saw me do it on a job in Charlotte and said I was washing out the lime and making the bond weaker. How do you guys add your water and mix to get the strongest hold?

It's wild how we all just kind of accept things until someone finally breaks the silence, like there's this unspoken rule to just let stuff slide. Makes you wonder how many other quiet disasters are happening right now that nobody wants to be the one to call out.
