Doubt it makes that big a difference honestly (seen plenty of rushed jobs turn out fine).

My uncle was a concrete contractor for thirty years. He always said the difference between a good slab and a cracked one is often just ninety seconds of extra mixing. I saw it myself helping him once, two identical pours from the same truck, but the second batch got rushed. The finish was chalky and it didn't cure right. That pickiness isn't about being difficult, it's about the material needing that full time to come together.
