Why does nobody mention the water first? My tap tested 190 ppm and the coffee change shocked me
Two Saturdays ago I grabbed a $12 TDS pen at the hardware store in Boise just to check my tap, and the reading came back 190 ppm. I'd been chasing grind settings for weeks on beans that tasted muddy, blaming my burr set the entire time. I started buying 99 cent gallons of distilled and cutting them half and half with tap, and the same beans suddenly had a clean, sweet finish I could actually pick out. Now I test a cup of water before I touch the grinder dial. What ppm is your tap running at, and did it change your brew much?
190 ppm tap is actually fine for coffee, it's the distilled cut that's the real story here. Pure distilled water has almost no minerals, and coffee needs some to pull out the good stuff, so going half and half just brought you back to a normal range. The muddiness you were tasting was probably more about the beans or grind than the water itself.
