Update: spent 2 months blaming my grinder for sour shots, and it was my $12 scale the whole time
Grabbed a bag of Ethiopian from the place on 5th and every single shot tasted like lemon water no matter how fine I went, until a barista asked what my dose was and I admitted I'd been eyeballing it. Turns out my old scale drifted 3 grams every time, so has anyone else had a cheap scale quietly wreck their ratio?

Did you ever try weighing the same thing twice in a row to see if it gave you the same number? My cheap one did that thing where it would read fine, then I'd tare it, then somehow it added like 2 or 3 grams out of nowhere. I spent weeks messing with my grind setting when really my dose was all over the place, and once I started weighing every single time on a scale that didn't lie, the shots got way less sour. It's such a sneaky problem because you trust the number without even thinking about it.
