Tried cold brewing with a paper filter instead of a mesh one. Coffee came out crystal clear but tasted like cardboard.
I used a standard pour-over paper filter in my mason jar for cold brew last week. The coffee looked beautiful, no sludge at all. But the flavor was flat and had this weird papery taste I couldn't shake. My guess is the paper soaked up too many oils from the beans during the long steep time. Has anyone else tried this and figured out a workaround?

Three batches in a row before I gave up and just used store-bought. Number six was where I finally saw the problem. You need to let the starter sit out for a full 12 hours after feeding before you even think about using it. If it's cold in your kitchen, find a warm spot near the fridge motor or on top of the water heater. Also ditch the tap water and use bottled spring water, the chlorine in tap kills the wild yeast. Once I switched to bottled water and gave it that extra time, the bread started rising like it should.
