Realized after 2 years of roasting that my thermometer was reading 40 degrees low because it was touching the drum wall
I only figured it out when my Ethiopian beans came out looking like charcoal but barely hit first crack, so I stuck a probe in the bean mass and saw the real temp was way higher than my old reading, has anyone else dealt with false readings from their setup?

A buddy of mine spent six months wondering why his roasts were always so uneven until he realized his probe was sitting in an air pocket instead of the bean mass. He switched to a thinner probe and suddenly everything lined up.

I had this exact same headache with my smoker last year. I got a $15 digital probe on Amazon and the wire was too thick, kept reading the air in the dome instead of the meat. Took me three pork shoulders to figure it out.

My father had a similar problem with his smoker, spent a whole summer wondering why his briskets were tough as boot leather. Turns out the probe wire was getting pinched under the lid and reading the air temp instead of the meat. A simple grommet fix saved his whole cooking game.
