PSA: Stop ignoring the water you use for brewing - my tap water was ruining everything

I had a friend over last month who roasts his own beans professionally. He tried my pour-over and went quiet for a second, then asked "what's in your water?" I told him it was just tap from my apartment. He said it tasted like minerals were fighting the coffee. I was offended at first but he wasn't wrong. I started using a basic Brita filter and the difference is insane. Chocolate notes I was never getting before. Anyone else deal with the water rabbit hole? I don't want to buy $30 jugs of fancy water every week, but the filter method is working so far.

tasted like minerals were fighting the coffee" is a little dramatic don't you think? I've been brewing with straight tap water for years and I'm pretty sure my coffee tastes fine. Maybe your friend is just a snob or you got used to bad water or something. I get that if your water is straight up gross then a filter helps, but a Brita is like 15 bucks and takes 5 seconds to fill, not really a rabbit hole. Sounds like an excuse to overthink your morning ritual to me.
