My buddy said my beans tasted like ash, he was right about my roast curve

I've been roasting for about a year on a Behmor and thought I had it dialed in. Last month my friend tried a batch I was proud of and just said 'these taste like ash, too dark, all burnt.' I was mad for a day, then cupped them next to a lighter roast from a local place. He was dead on. I was pushing every roast to second crack because I thought darker meant more flavor. I pulled my next batch at first crack plus 40 seconds and dropped the charge temp from 400 to 375. Huge difference, way more sweetness and the fruit notes actually show up. Now I keep a log of drop temps and times for every bean I buy. Anyone else have a harsh tasting that actually saved their roasts?

That first crack plus 40 seconds move changed everything for me too.

Man, tell me about it. I still remember the first time I hit that exact spot, my jaw literally dropped. Took me like 3 more runs before I even believed it wasn't a fluke. Now I panic if I miss it by even half a second, like I broke some sacred rule or something. Honestly feels like the game devs just decided to be nice for once. I'm still waiting for the moment they patch it out just to mess with us.
