Barista told me my grind was 'chalky' and now my $18 hand grinder finally makes sense
So I was at this little cafe in Portland last month and the guy behind the bar asked what I was brewing at home. I told him my pour overs kept coming out bitter no matter what I did. He asked to see my grind and just said 'that's chalky, way too fine, you're choking the bed.' I had been going finer and finer thinking stronger equals better.
Went home, backed off two clicks on my Hario, and the difference was nuts. Same beans, same water temp, way sweeter cup. I had wasted like 3 bags of decent Ethiopian beans grinding them into dust.
Anyone else get humbled by a random barista? What's the one tip that flipped everything for you?
