Question about bevel prep on thick plate

I keep seeing guys on jobsites in Houston grinding a 45 degree bevel freehand on 1 inch plate and calling it good. Last week I had to fix a joint where the bevel varied from 30 to 50 degrees across the weld. Doesn't that cause problems with fusion and fit-up down the line?

That uneven bevel will screw with fusion and make fit up a nightmare.

Ask @seanjohnson if hes ever welded on a bevel that wasnt perfect.

Does @charlie_allen think the filler rod can compensate for that gap?
