Why does nobody talk about how long canned biscuits actually last

I kept a tube of those crescent rolls in the fridge for what I thought was a week. Turns out it was closer to three weeks. I only noticed because the dough had this weird sour smell when I popped it open. I still baked them anyway because I hate wasting food. Everyone at the brunch took one bite and made that face, you know the one. My sister finally said, 'Did these expire before your last haircut?' That was my wake up call. Now I write the date on the tube with a sharpie the day I buy it. Has anyone else played chicken with expired dough and lost?
